“Il Moro” is our black wholegrain rice, and it grows from seeds sown only in the 350 hectares that surround our farm. The grain is slender and deep in colour, with an aromatic scent that recalls bread fresh from the oven and hazelnut. Because it is wholegrain it keeps all of its fibre, and it stays loose and crisp as it cooks, never turning sticky. This is the rice we put on our own table when we want a dish you can both see and taste.
Rinse it under cold water, then boil it in plenty of salted water for 35 to 40 minutes, until the grain stays firm and loose. Drain it and dress it as you like, hot as a side or cold for rice salads. It does not overcook and it does not turn sticky, so it holds up well even when you prepare it ahead.

Questions about our rice
Our "Il Moro" cooks in 35 to 40 minutes in plenty of salted water. Being wholegrain, it needs more time than a white rice, but in return it stays loose and crisp and never turns sticky. Taste it towards the end: the grain should stay firm.
Allow about 80 grams per person. A 500 gram pack is enough for 4 to 5 portions, as a side or as the base for a rice salad. If you serve it as a main course on its own, go up a little with the amount.
It means we control every step within the 350 hectares around our farm in Lumellogno: we choose the seeds, we cultivate, we harvest, we mill and we pack, all of it ourselves. No one in between. This is the rice we eat ourselves too.
Rice is naturally free from gluten, as all rice is. Our "Il Moro" is no exception. For specific needs we still suggest you always read the label on the pack.
