Carnaroli is the king of rice varieties, and ours grows from certified seeds sown only in the 350 hectares around our farm. It is a large grain, rich in starch, with a clearly visible pearl. It holds the cooking time as few others do, and it takes on every flavour without going soft. This is the rice we put on our own table too, when a risotto really has to come out right.

Toast it dry or with a little butter, deglaze with wine, then add the hot broth one ladle at a time. It cooks in 16 to 18 minutes and stays al dente. At the end, off the heat, finish it with the mantecatura (the off-heat creamy stir of butter and cheese), then cover it and let it rest for a couple of minutes.

  • Yield: around 80 grams per person. 500 grams is enough for 4 to 5 risottos.

Around 80 grams a head for a first course. The 500 gram pack is enough for 4 to 5 risottos, and the 1 kg pack is the household stock.

It means we control every step within the 350 hectares around our farm in Lumellogno: we choose the seeds, we cultivate, we harvest, we mill and we pack, all of it ourselves. No middlemen. It is the rice we eat too.
