Arborio is the most classic risotto rice, and ours grows from certified seeds sown only in the 350 hectares around our farm. It is a large, round grain, rich in starch. As it cooks it releases all of that starch and gives the risotto a full, enveloping creaminess. This is the rice for anyone who loves a soft, well-stirred risotto, the kind that spreads across the plate.

Toast it dry or with a little butter, deglaze with wine, then add the hot broth one ladle at a time, stirring often to release the starch. It cooks in 16 to 18 minutes and stays creamy. At the end, off the heat, finish with the mantecatura (the off-heat creamy stir of butter and cheese), cover, and let it rest for a couple of minutes.

  • Yield: about 80 grams per person, 500 grams for 4 to 5 risottos.
  • Pairs with: saffron, asparagus, radicchio, seafood, and it is also excellent for supplì (fried rice croquettes), arancini (stuffed rice balls), and rice puddings.

Questions about our rice

For a risotto, allow about 80 grams per person. A 500 gram pack is enough for 4 to 5 risottos. If you serve it as a main course, you can be a little more generous with the amounts.
