This is our Carnaroli Classico, the king of rice varieties. A large, tapered grain, high in starch, with a firm texture that holds its cooking superbly. Even in the large format it stays the same rice we bring to our own table: this is Gran Riserva (our reserve selection), and we grow it, harvest it, mill it and pack it ourselves, here in Lumellogno (Novara, Italy).
Born for risotto. It takes up the broth one ladle after another and releases the starch that makes the mantecatura (the off-heat creamy stir of butter and cheese at the end) creamy, staying al dente right to the end. The 15 kg format is the practical choice when you cook for many, with no compromise on the quality we have always made.

Keep the rice in a cool, dry place, away from light. Once you have opened the pack, reseal it well. For the best-before date, please refer to the one printed on the pack.

Questions about our rice
It is made for restaurants, farm stays and hotels, but also for large families and for anyone who cooks risotto often and likes to keep our Carnaroli always in the pantry. It is the same rice as the smaller packs, in the large sack.
Keep it in a cool, dry place, away from light. Once you open the sack, store the rice in a well sealed container: it keeps for a long time without trouble. That way every risotto will have the same aroma as the first. We recommend using it preferably by the date shown on the pack.
It means we control every step across the 350 hectares around our farm in Lumellogno: we choose the seeds, we grow, harvest, mill and pack, all ourselves. No intermediaries. It is the rice we eat ourselves.
Yes, rice is naturally free from gluten, and our Carnaroli is no exception. We mill it with care in our own facility, from the paddy field to the sack.
