This is our Carnaroli, milled as a wholegrain: it keeps the outer skin, the bran, and with it more fibre and minerals. It grows from certified seeds sown only in the 350 hectares around our farm. The grain is large and rich in starch, with a more rustic, nutty taste than the white version. It holds the cooking beautifully, and asks only for a little more time. This is the rice we put on our own table, when the risotto really has to come out well.
Toast it dry or with a little butter, deglaze with wine, then add the hot broth a ladle at a time. It needs a little longer than white rice, so we always follow the cooking time printed on the pack and taste towards the end, until the grain is tender yet still firm to the bite. If you want to shorten the timing you can soak it first, but you don’t have to. At the end, do the mantecatura (the off-heat creamy stir of butter and cheese) away from the heat, cover, and let it rest for a couple of minutes.

Keep the rice in a cool, dry place, away from light. Once you have opened the pack, reseal it well. For the best-before date, please refer to the one printed on the pack.

Questions about our rice
Wholegrain rice asks for more time than the white version: count on 35 to 45 minutes, adding the hot broth a ladle at a time. Soaking it before cooking helps to shorten the timing, but it isn't essential. It stays firm and al dente.
For a risotto, count on about 80 grams per person. A 500 gram pack is enough for 4 to 5 risottos. For cold rice salads you can go a little lower, because the wholegrain grain is filling.
It means we control every step within the 350 hectares around our farm in Lumellogno: we choose the seeds, we cultivate, we harvest, we mill and we pack, all of it ourselves. No middlemen. It is the rice we eat ourselves.
