"Il Cardinale" is our red wholegrain rice — bold in flavour, deeply aromatic, with a colour that comes from the bran we keep intact. A rice for those who want their grain to be heard at the table.
"Il Cardinale", our red wholegrain
Red rice is rare in Italy. We chose to grow it because its flavour is unlike any other rice we know: rich, full-bodied, almost meaty, with a slight nuttiness from the bran. The grain is firm and slightly chewy.
"Il Cardinale" takes longer to cook than the white varieties, but rewards the time spent with a satisfying density. We grow it in the same paddy fields as the Carnaroli, with the same closed-loop integrated supply chain and the same ISO 9001 certification.
How we suggest to use it
- Robust rice salads with grilled vegetables, legumes, or smoked fish
- Pilaf with strong-flavoured spices (saffron, turmeric, cumin)
- Stuffings for peppers, tomatoes, courgettes
- Wholefood bowls with toasted seeds and roasted vegetables
